Description:
Swamp white oak is distinguished from all similar native species by its long-stalked acorns. Age of an oak tree before it produces first acorns depends on tree's specific condition, species, habitat, stress level ect., an it is anywhere from 10-30 years depending on the species. The best acorns for human/ animal consumption are that of Swamp White Oak (Quercus bicolor). They have the lowest tannin levels (bitter taste) of all of the north-east hardy white oaks and are healthy, sustainable, and pretty good once leached. It can also be used to create flour for bread. The acorns are sweet, like others in the white oak group, and are eaten by squirrels and other rodents. In a study in Wisconsin, swamp white oak acorns were found to make up 27 percent of the diet of wild ducks. Several nongame bird species include these acorns in their diet. Native Americans and pioneers have eaten the acorns raw or cooked. They have been ground into a powder and used as a thickening in stews etc or mixed with cereals for making bread. Roasted acorns have been ground and used as a coffee substitute. Bitterness of the tannins is removed by leaching in running water.
